Corn Chowder

My spin on Corn Chowder includes the addition of vegetables and bacon. Easy to make, this version gets a flavor boost from a “secret” ingredient. The result is a corn chowder that eats like a meal. Pair it with some fresh bread and you’ve got the perfect dinner, any night of the week.

Cuban Pulled Steak

Taking inspiration from Cuba’s national dish–Ropa Vieja–our Cuban Pulled Steak is actually homage to one of our favorite Portland restaurants (¡Oba!) that closed in 2017. This slow cooked dish is jam packed with flavor. It combines slow cooked flank steak with creamy potatoes. Corn salsa is added for freshness and the entire dish is balanced with a homemade crema.

Chocolate Pomegranate Parfaits

These parfaits are a reinvention of the Black Forest Gateaux. In this deconstructed version, pomegranate replaces cherry and the super dark chocolate cake has been lightened to complement the new fruit. Sweet cream rounds out the flavor, which is sure to be a new favorite in your house!
